Small shrub about 25-30 cm tall, evergreen, dark green and gray on the underside with purple flowers in small conical clusters. It is used as a condiment with a very diverse application, in obtaining essences and for its medicinal properties. Sow in early spring (late winter) to dispose of adult plants for late spring/summer or sow in summer to have thyme in autumn, the latter not highly recommended when it is at the end of summer. The best time to harvest thyme is in late spring when the plant is in full bloom and has the greatest aroma. In the morning, as long as the plant is dry and free of dew, it is the best time to collect the thyme. Planting time: from April to June in Mediterranean climate; from May to July in continental climate. Planting depth: Put 3-4 seeds per hole 0.5-1 cm deep. Crop frame: 40 cm between plants Solar exposition: full sun Irrigation: Infrequent. Resists drought. Harvest: The leaves can be collected throughout the year as long as the plant does not bear fruit. For this reason, it is recommended in full bloom to cut the flower buds so that it does not bear fruit and we can continue harvesting leaves.
